Ingredients
1 large fresh, ripe peach, peeled and sliced into thin slices2 oz. of nonfat cream cheese2 tsp. of Splenda (or other fake sweetner)1 tsp. of vanilla extract (or to taste)3 vanilla wafters, reduced fat
Directions
1. Start by peeling the peach and removing the pit (freestone peaches work best for this, but use what you've got!)
2. Slice the peach into uniformly thin slices, about 1/2 inch thick, and grill on a grill pan, electric tabletop grill, BBQ grill or just heat through until tender in a sauce pan. (Grilling works best and looks so pretty!)
3. Mix together the cream cheese, Splenda and vanilla extract, whipping it together until thoroughly combined and light and fluffy. (If it's too thick, add a splash of skim milk- not included in the nutrition info. Some brands of nonfat cream cheese mix better than others.)
4. Coarsely crush the vanilla wafers, until it's big chunks.
5. Layer the peach in the dish.
6. Pour the cream cheese mix over the top.
7. Let chill in the fridge for 15-20 minutes until the cheese mixture is set.
8. Just before serving, sprinkle the wafer bits on the top for a bit of crunch.

Enjoy! Nutrition data for one serving, although nicer people than I am may be able to share.
