Eggplant Italiano

Ingredients
Eggplant, fresh, unpeeled (approx. 1.5 lb)Tomato sauce (8 oz can)Cottage Cheese, 1% milkfat, 1 cuptbsp of each:garlic powderonion powderbasiloreganosalt & pepper to taste
Directions
Wash eggplant, cut into 1" cubes
Place in saucepan over medium heat
Add 1 cup water and simmer until eggplant soft (about 20 min)
Next add spices, tomato sauce and tomato sauce
Simmer an additional 2-3 minutes

Makes 2 servings (approx. 1.5 cups each)
