Black Bean Burritos

Ingredients
1 C black beans1 C medium grain brown rice1 chicken breast1 C fresh spinach1/4 C Mexican style shredded cheese1/2 C Newman's Own Chunky Peach Salsa (or salsa of your choice - the peach salsa gives it a different twist that I really like)7 La Tortilla Factory High Fiber-Low Carb Whole Wheat Tortillas
Directions
NOTE: this is the first time I've posted a 'made up' recipe so please forgive the format. Hopefully, it's easy to follow.

Prep (Can be done up to a week prior to making the recipe)

If you are using dried beans prepare black beans according to package directions. Otherwise you can use canned black beans and skip the prep time.

Prepare brown rice according to package instructions

Recipe

Cook chicken breast (I microwaved mine for 5 min in one of the veggie microwave bags)

Preheat oven to 350 degrees

Cut up chicken breast and spinach

Spray a skillet and heat prepared black beans, brown rice, chicken breast and spinach until heated through. Add salsa and about 3/4 of the cheese.

Spray an 9X12 baking pan

Fill tortillas and roll into burritos.
Place in 9X12 baking pan.
Sprinkle the rest of the cheese over the top
Cook for 20-25 minutes

Serve with romaine lettuce if desired.

Makes 7 burritos

Substitutions
------------------
Swap the chicken with tofu or lean hamburger
Swap the spinach with shredded zucchini
Add 1/4 onion for flavor

    I am eating this as I write. It is awesome! I used a whole can of beans, most of a 16oz jar of med salsa and Ole high fiber totillas which have 12 gm of fiber. This is a fantastic healthy meal and so yummy. I will freeze the rest for a quick meal. - 8/9/09
