Creamy Butternut Squash Soup

Ingredients
2 lbs. (or 4 c.) peeled butternut squash cut into chunks4 c. vegetable broth1 1/4 c. light sour cream1/2 Tbsp. margarine
Directions
Cook squash in vegetable broth until very soft. Mash. Stir in sour cream and margarine. Cook on medium until bubbly.
Makes 6 servings.
