10 Minute Szechuan Chicken

Ingredients
4 chicken breasts, cut into one-inch cubes1 Tbsp vegetable oil3 cloves minced garlic5 Tbsp lite soy sauce1 1/2 Tbsp rice vinegar1 tsp Splenda1/4 cup watercayenne to taste
Directions
Heat oil in skillet or wok; stir-fry chicken and garlic until lightly browned. Dissolve Splenda in 1/4 cup water; add soy, vinegar, and Splenda-water to chicken. Cover and cook five minutes or until chicken is cooked through. Add cayenne and any other desired seasonings; cook two minutes uncovered.

Serve alone or over brown rice. Makes four servings.

Note: For a thicker sauce, toss chicken in cornstarch or starch substitute before cooking.

    This was delish. I tossed the chicken in cornstarch to make it more of a coated chicken and used real sugar and it was perfect. - 8/8/12
