Spelt Bread

1 cup warm water1 packet rapid rise yeast1 tsp. salt2 Tbsp. honey2 Tbsp. vegetable/ canola oil3 1/2 cups spelt flour
Dissolve the yeast in the warm water. Add the oil and honey.
In a large bowl combine 1 1/2 cups of the spelt flour and the water/yeast mixture. Beat for 3-4 minutes or until thoroughly combined.
Cover with a warm, damp cloth and let rise until double in size. About 30 minutes.
Turn out onto a board floured with the spelt flour. Knead in the remaining spelt flour (may not need it all) until the dough is not sticky and is smooth.
Place in an oiled loaf pan. Cover and let rise for 30 minutes or until doubled in size.
Bake for 30 minutes in a 350 degree oven or until browned and sounds hollow when you knock on the loaf.
