Stuffed Peppers

Ingredients
6 large green peppers1 lb ground turkey2 tbsp chopped onion1 cup cooked rice1 tsp salt1/8 tsp garlic salt1 can (15 oz) tomato sauce
Directions
*Preheat oven to 350 F

*Cut thin slice from stem of each pepper; remove guts and rinse

*Cook peppers 5 minutes in enough boiling water to cover, drain

*Cook and stir onion and turkey in skillet until turkey is light brown; drain

*Stir in rice, salt, garlic salt, and 1 cup tomato sauce; heat though

*Stuff each pepper with turkey mixture; stand upright in greased 8x8x12 baking dish

*Pour remaining sauce over peppers

*Cover and bake 45 minutes

*Uncover, bake 15 minutes longer

    Delish! I didn't boil them either, used hunts spag sauce (garlic and herb) instead of tomato sauce, and used 2 onions instead of just 2 T. Also added a few garlic cloves. - 2/13/09

    this is great! I took out the rice, added in some veggies like mushrooms and zucchini and put in a little chili powder to make it spicy....they turned out great!! - 11/16/08

    I eliminated the salt, used brown rice and leftover taco meat. Halved the peppers and stuffed open face. Really fills up the plate. Didn't boil either. A little shredded low fat cheddar adds nice color. - 3/14/09

    want to do it easy... We call it unstuffed peppers... fry(for a better term meat, onions and other stuff. add brown rice, cut up peppers, onions, add crushed tomatoes, can or fresh, put lid on skillet and simmer til all tender, taste add spices, serve with a salad... a one dish wonder.... enjoy!!! - 8/8/09

    I've made these for years! I do not pre cook the peppers either, I reduce the heat and cook a few minutes longer. - 8/8/09

    What a coincidence . . . I just cooked my own version of stuff peppers yesterday, only with veggies instead of meat. I used broccolli, onions, carrots, and grated cabbage, and I sprinkled mozzarella cheese on top. It was delicious. - 6/29/09

    I love these, thanks so much, they are in the oven right now! I too use brown rice and no boiling. I just heat them in the oven for a little while, I love them crunchy. I also add a little non-fat or low fat mozerella on the top. - 2/1/09

    I make this dish a lot. I don't cook the green peppers though. I like a little crunch! I use ground beef and rinse it after it is cooked to remove the fat. - 12/20/08

    This was pretty good, but the pepper came out mushy and completely fell apart the first time. The next time, I skipped the boiling step and it came out just right. The "stuffing" is pretty good but a little lacking in flavor, so you may want to play with the spices a bit to get it just right. - 11/6/08

    This was absolutely wonderful!!! I made it with ground turkey and didn't parboil the peppers. I also added some oregano and minced garlic. This is definately a keeper and will be making this on a regular basis. - 4/21/09

    Very simple to make...I put peppers in microwave instead for 10 min's (in dish with water) and I used fresh garlic instead of garlic salt...delish! My husband who is the world's pickiest eater enjoyed them as well! - 4/4/09

    These were really good! I used cut up veggie burgers instead of beef. It cut down the calories a lot. I also did not steam the peppers ~ I like the extra cruch. Will make again! - 4/3/09

    These were really good. I skipped the boiling part (just make sure that the sides of each peper are not touching each other or they won't cook) and used ground beef instead of turkey (because it is all I had). My hubby said the recipe is a keeper. Thanks! - 11/21/08

    Not exactly the way I've traditionally made these (usually add egg or egg white to uncooked meat and rice... stuff the peppers and top w/sauce) but I like this version (also minus the boiling). Thank you for sharing! - 1/7/09

    Imake stuffed pepper soften, you can omit the boiling time and just bake them accordingly. They will be soft yet not fall apart. - 11/13/08

    Delicious! I made it with brown rice, though, and did not boil the peppers. They cooked very well with just the baking. Very simple to make! Will try with Red and Yellow and Green peppers next time. - 1/18/09

    I enjoyed this version with the turkey. I substituted the white rice and used brown. Once the meat was browned, I mixed the rest of the ingrediants and didn't reheat them. I didn't boil the peppers much and they weren't that mushy but next time I will delete the boiling part. Overall, very tasty. - 11/17/08
