Stracciatella(Italian Egg Drop Soup)

Ingredients
8 cups chicken stock(use low sodium if you like)3 eggs5 T grated parmesan1 T fresh parsley(chopped)1/4 t nutmeg
Directions
-Heat 7 cups stock over med heat
-Whisk eggs cheese and parsley in a bowl
-Add nutmeg and remaining cup stock and whisk well
-When stock is boiling add mixture
-Whisk continuously for 3 minutes

Serve with additional parmesan but remember to account for it in the calorie count.

Makes 8 1-cup appetizer or side servings.
Or you can double the calorie count for 4 2-cup meal sized portion.

So filling and delicious!
