Banana Oat Pancakes1 cup oat flour1/4 cup whole wheat pastry flour1/2 tsp baking soda1/8 tsp salt1 ripe banana, mashed (about 1/2 a cup)1 cup light vanilla soy milk1 1/2 tsp apple cider vinegar1 Tbs sugar free maple syrup
In a small mixing bowl, combine flours, baking soda and salt. Stir to mix.
In a larger mixing bowl, combine banana, soy milk, vinegar and syrup. Mix thoroughly. Add the flour mixture and stir just enough to mix.
Heat large non-stick skillet. Pour small amounts of batter on to skillet and cook until tops bubble and edges are dry. Flip and cook second side about one minute, until golden brown. Serve immediately.
Stored in a covered container in the refrigerator, leftover Banana Oat Pancakes will keep for up to two days.
