Ingredients
1 TBSP OLIVE OIL20OZ SHREDDED HASHBROWNS THAWED2 CUPS SHREDDED COLBY JACK CHEESE1 DOZ EGGS1 8OZ BRICK CREAM CHEESE3 GREEN ONIONS CHOPPED8 OZ COOKED HAM OR SAUSAGE CUBED1/2 TSP PEPPER
Directions
PREHEAT OVEN TO 450. BRUSH 10 X 15 IN BAKING PAN WITH OIL. PRESS HASHBROWNS INTO PAN AND TOP WITH HALF THE SHREDDED CHEESE. BAKE FOR 8-10 MINUTES. MEANWHILE BEAT CREAM CHEESE ADD EGGS ONE AT A TIME ADD PEPPER. SAUTE' HAM AND ONIONS FOR 3 MINS THEN ADD TO EGG MIXTURE. REMOVE HASHBROWN FROM OVEN AND POUR EGG MIXTURE OVER TOP. RETURN PAN TO OVEN AND BACK FOR 6-8 MINUTES OR UNTIL CENTER IS SET. REMOVE FROM OVEN AND SPRINKLE REMAINING CHEESE ON TOP. CUT INTO SQUARES AND ENJOY!!
