B's Chicken Curry

3 whole chicken breasts, skinned & diced1/2 cup olive oil1 large spanish onion, diced2 large potatoes, dicedfresh peeled and diced ginger root fresh peeled/dice garlic, 5 cloves or to taste6 oz can italian tomato pastecoconut milkcumin, garam marsala, tumeric, meiti (mint), red pepper flakes, cinnamon, cardamom, cloves, salt and pepper to taste
makes about 6 servings.
dice all veggies and chicken. brown chicken lightly in pan, w/ tsp olive oil. season w/ salt and pepper and set aside.
in a dutch oven over medium heat, sautee onions and cumin in olive oil, adding ginger and garlic when onions are deeply golden, stirring constantly. add tomato paste and seasonings, simmer til blended, stirring.
add chicken last, reduce temp and allow to simmer until sauce reaches desired consistency. serve over rice w/ garnish of fresh chopped cilantro.
