Zucchini Quiche

Ingredients
2 medium-size zucchini squash1 medium onion, finely chopped (or reconstituted from dry)8 ounces Swiss cheese, shredded4 eggs (can substitute egg-beaters or other product)1 cup low-salt buttermilk baking mix1/4 cup oil1/2 tsp. No-Salt or blended seasonings1/2 tsp. Italian seasoningspepper to taste1 Tbsp. imitation bacon bits
Directions
Coarsely shred zucchini (peeled or unpeeled) to make about 5 1/2 cups. Toss with onion and cheese. Set aside. In a large bowl, lightly beat eggs. Stir in baking mix. Add oil, salt substitute, seasonings and bacon bits. Pour into a lightly greased quiche pan or 10 inch deep pie plate. Cook until knife inserted in center comes out clean. Serves 5-8.
