Bean Enchilladas

Ingredients
Fat Free Refried BeansCanned Jalapeno peppers, slicedCheddar Cheese, shreddedFlour TortillasEnchilada Sauce
Directions
Preheat oven to 375. Spread refried beans down the center of a tortilla. Sprinkle cheese and jalapenos to taste, add 1 tbsp of enchilada sauce, and fold into a burrito. Place in 9x13 baking dish. Repeat until dish is full of enchiladas, then spread remaining enchilada sauce over all. Sprinkle cheese to taste, cover with aluminum foil, and bake for 25-30 minutes. Remove foil and cook for additional 5-10 minutes or until cheese starts to brown. Remove and cool before serving. Makes anywhere from 4-6 servings, depending on size of the tortillas.
