Barley Pilaf with Pine Nuts

Onions, raw, 1 cup, chopped fineGarlic, 6 cloves, minced2 Bay Leaves, 1 tbsp, 5 Cups waterOlive Oil, 4 tbspBarley, pearled, raw, 1.5 cupCinnamon, ground, .5 tspPine Nuts, .5 cup Parsley, 1/3 cup fresh or 1 tsp drySalt and Pepper to taste
IN HEAVY saucepan, over medium heat, saute onions, garlic and bay leaves in oil until onion is golden. Stir in barley, cinnamon, water, salt and pepper, to taste. Bring to a boil. Simmer, covered, 35 to 40 minutes, or until liquid is absorbed and barley is tender. Discard bay leaves. Using a fork, stir in pine nuts and parsley.
