Green Chicken Curry

5 spring onions1 tbs green curry paste3 tbs lime juice500g skinless chicken breast, sliced into strips100g green beans, trimmed and sliced lenghtwise2 tbs desiccated coconut20g raisins, roughly chopped1/2 cup skim milk1/2 tsp oil
1. Heat oil in a non-stick frypan, add the onions, curry paste and lime juice. Cook on a medium heat for 2 minutes.
2. Stir in the chicken, beans, coconut and raisins. Lower heat, cover and simmer for 15 mintues, stirring severel times, until chicken is cooked.
3. Stir in milk. Cover and simmer for 10-15 minutes, stirring several times.
4. Allow to stand for 3-4 minutes before serving.
