Ingredients
Tomato paste (6 oz can)Tomato sauce (8 oz can)Whole tomatoes (28 oz can), with all liquid, broken up by hand2 pounds of boneless skinless chicken (I prefer breasts/tenderloinsYour Favorite Italian Seasonings, such as: Basil, Oregano, Rosemary, Fennel, Parsley, "Italian Seasoning", "Poultry Seasoning", Garlic (fresh or powder), Onion (fresh, chopped, or powder)Salt and Pepper to taste (Kosher and Fresh cracked are better, but whatever you have on hand)
Directions
Don't let the cooking time or prep time scare you; this is a toss together in the morning and leave it all day kind of dish.
Place your chicken in the bottom of the crockpot. Season it the way your family likes it; fresh garlic and onion if you like it... just use whatever you have on hand. Open the sauce (I prefer the Hunt's seasoned sauce & paste I listed, but whatever works, and you can use the lower sodium in order to lower the sodium further) and pour over the chicken. Open the paste and scoop over the chicken. Open the tomatoes, break them up and pour all the liquid over all the chicken. Mix completely. Set on low, this will cook completely and be melt in your mouth tender in 8 hours. You can cook it faster, but it just won't have as much time to get as tender. Makes eight 1/2-1 cup servings of chicken and sauce to pour over your favorite pasta. Top with cheese if you so desire.
