1 can shoepeg corn (11-12oz) or Sweet Corn1 can blackeye peas (rinse and drain)1 avocado, chopped2 roma tomatoes, chopped (or as much as you want)2/3 cup cilantro, chopped2/3 cup green onion, choppedDressing:1/4 cup olive oil1/4 cup red wine vinegar2 garlic cloves (or more to taste)3/4 tsp. salt1/8 tsp. pepper1 tsp. cumin
Chop the ingredients. Blend the dressing and pour over ingredients. Serve with tortilla chips.
