simple fresh peach sorbet

Ingredients
6 large peaches3/4 cup granulated sugar2/3 cup water1/2 teaspoon lemon juice
Directions
Cut peaches in half, pit, peel* and slice into small bite size pieces.
Place in a pot with 2/3 cup water and cook covered over medium-high heat until the fruit starts to fall apart (about 10 minutes).
Remove from heat and add 3/4 cup sugar.
Let cool to room temperature.
Puree in a food processor or blender, adding the 1/2 teaspoon of lemon juice.
Chill thouroughly in fridge, then freeze according to your ice-cream maker instructions.

*Note on peeling: If ripe enough they should be easy to peel by just pulling the skin off in big strips. If you are having a hard time slice and x in the skin on the end and blanch them in boiling water for 30 seconds. Cool in ice water and they should then peel very easily.

    This was very good. I decreased the sugar to 1/2c though (maybe my peaches were more "medium" than "large" too.) Right out of the ice cream maker, it was pretty soft and the next day it was firmer, like italian ice. Either way, it was yummy! - 7/3/10

    Honey might be good, but I probably wouldn't use as much honey as sugar, it might overpower the flavor. The sugar is what helps keep it soft once frozen, but I think that the sugar content in honey would have the same effect. If you try it, let me know how it works out.
