Banana Zucchini Chocolate Chip Muffins

Ingredients
* 3/4 cup of egg beaters * 1/4 cup vegetable oil * 3/4 cup applesauce * 1/2 cup brown sugar * 1/4 cup white sugar * 3/4 cup of Splenda * 1 tbl vanilla extract * 2 cup raw zucchini, shredded * 1 cup mashed ripe banana (i used 2 whole bananas) * 2 cups whole wheat flour * 1/4 tsp baking powder * 1 tsp baking soda * 1 tsp salt * 1 tbl ground cinnamon * 1 cup mini chocolate chipsCombine the eggs, sugars, oil, vanilla, and applesauce. Add the banana and zucchini and mix well. Add the remaining dry ingredients (everything but the chocolate chips) and mix until combined. Then stir in the chocolate chips.Zucchini is on sale at the grocery store this week. I’m stocking up and grating it to go in my freezer. These are super easy to make and very yummy.
Directions
Bake at 350 for 25 minutes. Makes 24 muffins.

    Tried this today and it turned out great. I didn't have splenda so I used regular white sugar instead. Also, I reduced the amount of cinnamon to 1 teaspoon instead of 1 tablespoon.
