Cheese-Stuffed Shells

1 3/4 cup part-skim ricotta cheese2 cup part-skim mozarella cheese (hold 1/2 cup til end)1/4 cup parmesan cheese1 egg1/4 cup fresh chopped parsley20 jumbo pasta shells, cooked and cooled
Cook pasta shells according to package directions, drain and let cool.
While pasta is cooking/cooling, add all cheeses, parsley and egg to a bowl, mix well.
Stuff shells with cheese mixture.
Fill the bottom of a 9x13 baking dish with 1/3 of the jar of pasta sauce. Place stuffed shells in the dish. Top with remaining sauce from the jar.
Bake for 30 minutes.
Place remaining 1/2 cup of mozarella on top and broil for approx. 5 minutes. Let dish sit for 5 minutes when done.
Makes 20 shells, 5 shells per person.
