Curried Mango, Jicama, Fennel Salad

Ingredients
2 Mangos, firm but ripe;peeled and cubed to make 2 Cups1 Jicama, peeled and julienned into thin strips to make 2 Cups1 Fennel Bulb, diced to make 1 Cup1 TBS of sweet Curry powder.Juice from 3 limes (about 1/4 Cup.Salt and pepper to taste.
Directions
Makes approximately 4 servings of 1 1/4 cups each.

1) In a large bowl, combine mangos and fennel.
2) Add lime juice and Curry powder. Mix well.
3) Fold in julienned Jicama.
4) Add salt and pepper to taste.

Cover and marinate in the refrigerator for at least 30 minutes before serving.
