Sweet Potato Chicken Pie

Ingredients
3 Sweet potato4 tbsp Sour cream, fat free1/2 Butter, salted, .5 cup (remove)12 oz Perdue Ground Chicken1/2 cup of Orange or Yellow Peppers (bell peppers)Salt and pepper to taste1/4 cup Sargento cheese low fat Mexican blend
Directions
In a medium pan, boil water in medium high with a pinch of salt.

Peal and cut in squares the sweet potato. In the meantime, season the ground chicken with salt and pepper or other spices. Add the peppers and cook in a pan.

Preheat the oven at 350 degrees for 10 minutes.

Once the potatoes are cooked, mash them mixing with the butter and the sour cream.

In a small baking pan create a (1) layer or mash sweet potato. Later add a layer of the (2) cooked ground chicken. Repeat the process steps one and two, until the mash potatoes are done.

Top it with 1/4 of cheese. Put it in the oven for 15 minutes or until the cheese is melted and kind of crispy.

Take out of the oven and let it rest for 10 minutes before serving.
