L.R. Chewy Oatmeal Raisin Cookies

Ingredients
3 cups rolled oats1 cup raisins1-1/2 cups brown sugar1/2 cup apple butter2 large eggs1/4 cup oil1 tsp. vanilla2 cups whole wheat flour1 tsp. baking soda1/2 tsp. baking powder1/2 tsp.salt2 tsp. cinnamon1 tsp. ginger1/2 cloves
Directions
Preheat oven to 375. Spread rolled oat on an ungreased baking sheet and toast until lightly browned 5-7 minutes; set aside. Plump raisins in boiling water for about 5 minutes and drain; set aside.
Beat sugar, apple butter, eggs, oil and vanilla in a large mixing bowl with an electric mixer for a minute or two. Combine flour, baking soda, baking powder salt and spices in another bowl. Stir the flour mixture into the apple butter mixture. Stir in the reserved oats and raisins; mix well. Drop by small cookie scoopfuls onto lightly greased baking sheets. Bake for about 10 minutes at 375, switching pans toward the end of baking. Cool on counter top. Makes about 44 cookies.
