Old Fashioned Potato Salad

Ingredients
1 c. light mayonnaise2 T. yellow mustard1 T. cider vinegar1 1/2 tsp. salt + 1 1/2 tsp. saltdash pepper1/2 tsp. celery seed2 T. dried parsley5 medium potatos1/2 c. chopped green onions1 1/2 c. chopped celery4 hard boiled eggs chopped
Directions
Wash potatoes, leaving skin on. Put in large pan and cover with water that has been salted w/ 1 1/2 tsp. salt. Bring to boil and boil for 30 minutes. Drain and cool.

After potatos are cool, mix mayo, mustard, vinegar and spices in a large bowl. Add green onion and celery.

Chop potatos into 1 inch chunks. Add potatos and chopped eggs into mayo mixture and fold in. Refrigerate.
