Honey mustard chicken with parsnips

Ingredients
8 chicken thighs, bone in skin off2 onions finely chopped1tbsp olive oil300ml veg/chicken stock350grams parsnipsthyme sprigs2tbs honey2tbsp corse grain mustard
Directions
put half of the oil in a large pot. Brown chicken. Once brown remove from the pot and set aside. Cook the onions with the rest of the oil for 5 mins til soft. Add the parsnips and mix.
mix the honey with the mustard and add the stock.
Put back the chicken into the pot with the vegetables
add the stock mixture and stir to coat all the contents. Add thyme.
put the lid on the pot and cook on low/medium heat til chicken is cooked.
If you have the time the dish can be cooked for up to 90mins when the meat will be very tender.
serve with rice of wilted greens
