Caramel Apple Bars

3/4 Cup Packed Brown Sugar3/4 Cup Butter, softened (I used Imperial Brand)1 3/4 Cups All Purpose Flour1 1/2 Cups Quick Cooking Oats1 - 14 oz Package individually wrapped Caramels (unwrapped)1 tsp Salt1/2 tsp Baking Soda4 1/2 Cups Apples (peeled, cored, chopped)1 Tbs Lemon Juice3 Tbs All Purpose Flour
1. Preheat oven to 400 degrees F
2. In a large bowl, cream together the brown sugar & butter until smooth & set aside.
3. In a separate bowl, combine 1 3/4 cups flour, oats, baking soda & salt. Stir into creamed mixture until well blended. Set aside 2 cups of this mixture. Press the remaining mixture into the bottom of an ungreased 9 X 13 inch baking pan.
4. In a medium bowl, toss apples with lemon juice, then toss them with the 3 Tbs flour. Spread apple mixture evenly over the prepared crust.
5. In a small saucepan over medium heat, melt caramels, stirring frequently until smooth. Pour the melted aramels evenly over the apples. Sprinkle the reserved oat mixture over the top of the apple layer. Press down lightly.
6. Bake for 25-30 minutes until the top is golden brown & the apples are tender. Cut while slightly warm & refrigerate any leftover bars.
