Mostly Meatless Chili

Ingredients
5 oz lean ground beefI medium onion, chopped4 cloves garlic, minced1/2 pound mushrooms, chopped2 cups cauliflower pieces1 medium yam, diced1 cup zucchini, chopped1 large green or red bell pepper, chopped2 cups frozen corn kernels28 oz can Roma or plum tomatoes, roughly chopped, with liquid2 19 oz cans red kidney beans, rinsed and drained2 stalks celery, chopped1 cup tomato or V8 juice1 tbsp cumin2 tbsp chili powder1 tsp paprika1 tsp salt1/8 tsp cayenne pepper (or more to taste)2 tbsp tomato paste
Directions
6 generous servings

Saute beef, onions and garlic in large stew pot over med heat for about 5 minutes.

Add mushrooms and saute for another 5 minutes.

Stir in cauliflower, yam, zucchini, green pepper, corn, tomatoes and liquid, kidney beans, celery, tomato juice, and all spices and tomato paste.

Bring to a boil, reduce heat and simmer for 30-60 minutes.

Serve with a dollop of sour cream for extra yum!
