Philly Cheesesteak Sandwiches

4 T EVOO1.5 pounds flank steaks, or breakfast steaks3T steak seasoning1 T dijon mustard2T worchestershire sauce2T hot sauce4 large onions, thinly sliced3 cloves garlic, chopped1 T flour1.5 cups beef stocksalt and pepper12 slices provolone cheesecrusty rolls or bread
Preheat grill pan and add EVOO. In a skillet add onions, season with salt and pepper. Cook on medium heat for 7-8 minutes. Add garlic, mustard,worchershire sauce and hot sauce. Cook another 5 minutes. Add flour, cook 1 minute then add stock. Season steak with steak seasoning and grill for 5-6 minutes per side. Remove and let rest.
Toast rolls or bread in oven. Thinly slice the steak and add to onions. Layer provolone cheese on both sides of the bread and top with steak mixure. Tio with other slice of bread and place in the oven 1-2 minutes to melt cheese
