Slow Cooker White Bean & Pumpkin Soup

Ingredients
1 sprays olive oil cooking spray, or enough to coat pot1 medium onion(s), coarsely chopped15 oz canned pumpkin3 1/2 cup fat-free chicken broth15 1/2 oz canned white beans, rinsed and drained1/4 tsp ground oregano1/8 tsp table salt, or to taste1/8 tsp black pepper, or to tasteParmesan cheese for garnish
Directions
1. Spray pot with cooking spray (1-2 seconds)
2. Combine all ingredients except parmesan in crockpot.
3. Cover and cook on low setting for 8-10 hours.
4. Serve garnished with 1 Tbsp grated parmesan .

    Made this soup today and shared it with all my coworkers and my husband - EVERYBODY LOVED IT! I altered it a little: I added an extra can of beans a little bit before serving and I added about 1/2 cup of skin milk to make it a little creamier. I also used VEGETABLE broth (vegetarian). - 11/18/11
