Goat cheese stuffed chicken breast

2 boneless skinless chicken breasts (approx 8oz)2oz Trader Joe's creamy goat cheese (45 cal & 3.5 g. fat)2 slices Trader Joe's rosemary ham diced1tsp dijon mustard1/8 C plain breadcrumbs3 egg whites lightly beaten salt & pepper to season
Pre-heat oven to 400
Wash chicken and pat dry
Cut a horizontal slit along the thin, long edge of a chicken breast half, nearly through to the opposite side.
In a bowl combine ham, goat cheese and dijon to create filling
Season breasts, stuff with filling and squeeze shut
Dip chicken in to egg white and then dredge in breadcrumbs
Heat oil in pan until hot but not smoking
Place chicken in pan and brown (2 min) flip and cook 1 min
Transfer to baking dish and place in oven
cook between 12-16min internal temp. of 165
