Kellogg's All-Bran Cereal, 3 cupBoiling Water, 1 cupApplesauce, unsweetened, 1/2 cupNutrasweet Equal, 1 cupEgg, fresh, 2 extra largeButtermilk, lowfat, 2 cups*Whole Wheat Flour, 2 1/4 cupBaking Soda, 2 1/2 tspSalt, 1 tspWhey Protein Powder, 2 Scoops @ 21g/Scoop
Makes Approx 36 Muffins
1. Pour 1 cup of cereal in bowl
2. Pour boiling water over cereal above and let stand
3. Mix remainder of cereal with applesauce, equal, eggs, and buttermilk.
4. In a seperate bowl sift flour, baking soda, salt, and whey protein
5. Combine all of the above
6. Bake desired amount at 400 degrees for 18 minutes
7. Covered batter will keep in refrigerator 2-3 weeks

I really shouldn't rate this b/c of all the changes I made. I used 2 c of Frosted Mini Wheats and a cup of wheat germ instead of bran cereal. I used 1 1/4 c a.p. flour and 1 c of oats instead of wheat flour. I added a diced apple, pumpkin pie spice, and more leavening. They're delicious!!! - 5/14/10
