Black Bean Soup

2 Cans Black Beans (leave one can undrained)1 Can of Water1/2 Cup Salsa3/4 Cup Chopped Onions1/2 tbsp Cumin1/2 tbsp garlic powderLow-Fat Sour Cream (Optional)Low-Fat Shredded Cheese (Optional)Avocado (Optional)Tomatoes (Optional)Note: Cumin and Garlic Powder may be substituted with 1 tbsp cayenne powder
(1) Mash one can of beans with potato masher or food processor.
(2) Pour both cans of beans into medium saucepan.
(3) Add water, salsa, cumin and garlic powder, and bring to a boil.
(4) Cook 10 more minuted, or until soup has thickened.
(5) If desired top with shredded cheese, sour cream, avocado and tomato
Serves: 6 1-cup servings
