Fish Tacos

8 oz tillapia or Basa fillet cut into four strips1/4 cup flour3/4 to 1 t salt1/4 t black pepper1 T Chile powder1/2 t onion powder1/2 t ground corriander1 c chopped cabbage1/4 c. chopped cilantro4T chopped scallion4 servings of Hot Smokey Salsa (see Helen's own cookbook)
Mix together all the dry ingredients. Dredge each of the fish pieces in the flour mixture until coated.
Put 2-3 tablespoons of olive oil in a skillet and heat. When the oil is hot, cook the fish until lightly browned and cooked through, about 3-4 minutes on each side.
Remove from the pan and drain on paper towels or coffee filters to remove any excess oil.
Warm the tortillas and serve with cilantro, scallions, cabbage and salsa on top.
One taco is one serving - and they go great with beans or rice!
