Corn/Gluten Free Cinnamon Chocolate Chip Cookie Mix

3/4 cup granulated sugar3/4 cup packed brown sugar1 cup unsalted organic butter2 eggs1 tblspn pure vanilla extract (watch for hidden "additional flavors"2 tblspn ground cinnamon2 1/4 cups white rice flour1 tsp baking soda1 tsp guar gum1 11.5 oz bag of dark chocolate chips
Add 3/4 cup granulated sugar and 3/4 cup packed brown sugar to large bowl. Mix in 1 cup unsalted organic butter and 2 eggs. Add 1 tblspn pure vanilla extract (for corn allergens - watch for hidden "additional flavors"!!!) and 1 tblspn ground cinnamon. Stir/mix in an 11.5 oz bag of dark chocolate chips.
In second bowl, mix 2 1/4 cups white rice flour, 1 tsp baking soda and 1 tsp guar gum (keeps the cookes together better when using rice flour).
Mix flour batch into the sugary deliciousness from above slowly and create greatness!
For best results, freeze the dough for 10 minutes or so. It balls better. :)
Bake on 375 for about 10-15 minutes or until golden brown. Makes 48 cookies. Can also be spread in large 1 inch pan and cut into cookie bars. Same temperature, but start checking on the bars after about 20 minutes.
