Pressure Cooker Catalan Beef Stew

Ingredients
2 T olive oil2 1/2 lbs beef chuck, cut into 2" cubes3 large onions, diced4 cloves garlic, minced,4 medium carrots, peeled and cut into a large diceparsley sprigs, about 1/2 cup worth, tied at the stems with kitchen twine2 bay leaves1 c white wine1 cbeef broth1 oz dark chocolate, chopped4 large potatoes, peeled and cut into a large dicesalt and pepper to taste
Directions
Heat oil in the pressure cooker over medium-high heat. Add beef cubes in batches making sure not to crowd and brown on all sides. Remove to a plate and continue until all beef is browned.

Add onions to pan and saute until softened and translucent. Add garlic and cook, stirring constantly for about another minute. Add carrots, wine, broth, potatoes, and chocolate. Place back over heat and stir to scrape up browned bits on the bottom of pan. Add bay leaf and parsley.

Close cover to pressure cooker and bring up to pressure. Cook at P1 for 40 min., P2 for 30 min, or P3 for 20 min.

Release pressure as instructed for your pressure cooker. Remove bay leaf and parsley and serve.
