Pumpkin Bread Pudding

Ingredients
1 1/4 cup 2% milk1/2 cup granulated sugar3 eggs, lightly beaten1 (15-ounce) can canned pumpkin1/2 loaf challah or other egg-based bread, cut into 1-inch cubes1/2 tsp pumpkin pie spice1 tsp vanilla extract
Directions
Mix first 5 ingredients together. Place bread cubes into 8-inch square baking dish, coated with cooking spray. Pour custard over bread , cover and refrigerate for 30 minutes up to 4 hours.

Preheat oven to 350F. Bake covered for 25 minutes. Remove cover and bake an additional 10 minutes or until knife inserted into center comes out clean.

Serve warm with light yogurt, light whipped cream or dust with powdered sugar.

Makes 8 1/2 cup servings.
