Pumpkin Bread

- 3.5 cups flour- 2 tsp. baking soda- 1.5 tsp. salt- 2 tsp. cinnamon- 2 tsp. nutmeg- 3 cups sugar- 4 eggs, beaten- 16 oz. canned pumpkin- 2/3 cup water- 1 cup canola oil
Makes 2 loaves (16 slices). One serving = one slice.
Preheat oven to 350 degrees.
Combine flour, baking soda, salt, cinnamon, nutmeg, and sugar in large mixing bowl. Add eggs, water, oil, and pumpkin. Stir until blended.
Pour into two 9x5" loaf pans. Bake one hour. Cool slightly and take out of pans to let cool on rack.
Tastes best if wrapped and refrigerated for one day before eating. Keeps well in refrigerator and can be frozen.
Makes a good Christmas gift.
