Fiesta Fry Pan Supper

Ingredients
1 lb. lean Ground Turkey (white meat only)1 medium chopped onion3 T. Taco seasoning mix (low sodium)2 cups water3 zucchini, sliced28 oz. can diced tomatoes, low sodium2 cups frozen corn2 cups instant brown rice (uncooked)6 oz. shredded light cheddar cheese
Directions
In a skillet, cook turkey and onion until meat is no longer pink and onions are translucent; drain if necessary.
Stir in low sodium taco seasoning, water, zucchini, tomatoes and corn; bring to a boil.
Add rice. Reduce heat; cover and simmer for 5 minutes or until rice is tender and liquid is absorbed.
Sprinkle with cheese; cover and let stand until cheese is melted.
Makes 6 servings.

    i not a fan of this type of food i would remove corn add green pepper mushrom and see what happens also garlic seve with a green salad - 9/9/09
