Spicy Black Bean and Chorizo Soup

Ingredients
1 15oz can refried black beans4 c. chicken stock6 oz chorizo sausage, browned and drained1 c. chopped carrots1 15oz can diced tomatoes (drained)1.5 c. chopped onion2 jalapeno peppers, choppedhandful of chopped fresh cilantro
Directions
Brown the chorizo sausage, casings removed. Drain. Sauté vegetables (minus tomatoes) in same pan. Stir in refried black beans and slowly add chicken stock, stirring until smooth. Bring to boil and simmer 15 minutes. Add diced tomatoes to pot. Heat through. Garnish with chopped cilantro.

Makes 6 main course servings.
