Banana Bran Muffins

3 cups wheat bran2 cups buttermilk (skim milk with 2ish tbls lemon/lime juice)1/3 cup vegetable oil1/3 cup applesauce2 eggs1 cup brown sugar4 very ripe bananas2 cups whole wheat flour1/4 cup wheat germ2 tsp baking soda2 tsp baking powderPinch Salt2 cups crushed bran flakes
1. Pre-heat oven to 375 degrees.
2. Let the buttermilk and wheat bran sit together in a bowl for 10 minutes.
3. Add the oil, applesauce, eggs, then brown sugar. Then add the mashed up bananas (I like to mash 3 and cut the other one in chunks to add in at the end.)
4. Mix flour, wheat germ, baking soda, baking powder, and salt together seperately. Mix this dry mixture with the rest.
5. Stir in bran flakes.
Coat a regular sized muffin tin with cooking spray. I fill the regular sized muffin tins almost to top and they never really overflow. Bake for
15ish minutes.
**And the "18" count of muffins includes "testing" some of the batter :)

This is an EXCELLENT recipe!! I just made it this morning and they are a hit with my family! Instead of 3 cups wheat bran, I used 1.5 cups wheat bran and 1.5 cups oat bran. I also added 1 c golden raisins, 1 tsp cinnamon, and 1 tsp vanilla extract. (Add 29 calories). I'll be making these again! - 9/13/09
