Vegetarian Thai Lentil Soup

Ingredients
4 cups low sodium vegetable stock1 15-oz can reduced sodium lentil soup3 Tbsp green curry paste1 14.5oz can crushed tomatoes2 cups frozen peas4 oz firm tofu, cubed
Directions
1. Spray a large microwave safe bowl with cooking spray to coat (1-3 seconds)
2. Add all the igredients to the bowl
3. Cover with plastic wrap, venting on one side
4. Microwave on high 4-5 minutes
5. Stir in the tofu
6. Re-cover
7. Microwave on high until tofu is heated through (about 1 minute)
