Savory Zucchini Pancakes

Ingredients
2 tbsp heart smart bisquick, 1 egg slightly beaten, 1.5 cup shredded zucchini, a dask of pepper, 3 tbsp parmesan, 1 tbsp canola oil, .5 tbsp cooking spray (for cooking)
Directions
Beat egg in bowl and add remaining ingredients with the exception of the 0.5 tbsp cooking spray. Cook 1 tbsp per pancake in a frying pan on medium low flipping after a few minutes. Makes approximately 9 pancakes. *These are savory pancakes, so they may be served alone, with non-fat plain yogurt and a little parsley or a little tomato sauce.

    I had a variation at a restaurant & tried to recreate a healthy version at home--this is basically it. To the reviewer who doesn't think it's enough Bisquick--it is, since you just want enough binder (Bisquick, egg) to hold the zucchini together. I serve w/warm marinara sauce-good veggie entree. - 9/20/09

    I made this with a little garlic salt and flour instead of bisquick and it turned out great. Even my husband who hates zucchini loved it. I served it with a piece of ham warmed in the microwave underneath and some fresh herbs on top. Delicious! Thanks for the recipe! - 9/16/09

    To DarlingAbigail, I think this would be referred to as Silver-Dollar size. The volume is from the zucchinni. These are not the fluffy pancakes that you see @ IHOP or Dennys' but they are unique and quite tasty - 2/16/10

    Am I really reading these measurements right? 1 TBSP of batter for 1 pancake? Wouldn't it be the size of a quarter? I must be missing something... - 9/19/09
