1000 g. New Potatoes (it really depends on the size of your potatoes, but for me this was 15-20 small potatoes)2 green onions chopped (I used jarred)1T Garlic2T Vinegar (1 white, 1 balsamic, OR 2T Red Wine)2T Oil.34 c. fresh parsley or 3T dried1T dried dill1T lemon juice1T black pepper1T Paprika
Wash and quarter the potatoes. Boil for 15 minutes. Drain well and mix with oil, vinegar, garlic, and lemon juice. Let cool. Add spices and serve and room temperature.
Makes 4 large servings. (approx. 1.34 c. each).
