Caramel Apple Cake

1-1/2 cups Bisquick baking mix2/3 cup granulated sugar1/2 cup skim or 1% milk4 medium apples, peeled, cored & sliced1-1/2 tbsp lemon juice3/4 cup packed light brown sugar1/2 tsp ground cinnamon1 cup boiling water
Heat oven to 350 degrees. In medium mixing bowl, combine bisquick and sugar til well mixed. Stir in milk to make a semi-thin batter. Pour into ungreased 9 inch square glass baking dish. Toss apple slices with lemon juice, then put the apple slices on top of the batter. Combine brown sugar and cinnamon and sprinkle evenly over apples. Pour boiling water over top of apples. Bake in heated oven for 50 to 60 minutes, until a toothpick inserted near center comes out clean. Let cool for 10 minutes before serving warm with a dollop of fat free whipped cream or light vanilla ice cream or frozen yogurt. Makes 9 servings ( one 3 inch square for each serving). Note: nutrition info is for cake alone.
