Vanilla Cake with Brown Sugar Glaze

2 cups minus 2 tablespoons white flour2 teaspoons baking powder1/2 teaspoon baking soda1/2 teaspoon salt1/2 cup unsalted butter at room temperature1 1/2 cups white sugar2 large eggs2/3 cup buttermilk1 tablespoon vanillaFor the glaze:1 cup brown sugar3 tablespoons water
Preheat oven to 375 F. Grease a nonstick bundt pan.
Cream the butter and sugar, beat in the eggs, then the vanilla and buttermilk. Stir in the dry ingredients with a wooden spoon to keep the batter tender.
Bake in the centre of the oven for 30 minutes, then test with a skewer.
Cool for 10 minutes, and turn out onto a rack to cool completely.
When cake is cool, glaze it.
Boil the brown sugar and water for 5 minutes, then put pot in cold water bath stirring all the while. When it thickens, pour it over the cake. If it gets to thick, put the pan back on the heat to liquify the glaze.
It will be really sticky on the teeth the first day, but put the cake in a cake saver and the next day the glaze will have softened and it will be delicious for several days thereafter.
