Lentil stew

Ingredients
2 tsp Garam Masala Indian Spice Mix2 Tbsp olive oil1 cup chopped onion1 cup diced celery1 cup diced raw carrots1 cup dry lentils2 cups diced yukon gold potatoes (I use yukon gold because the texture is really nice in this)2 cups canned diced tomatoes (if you can stand the heat, Rotel are nice!)4 cups vegetable or chicken brothsalt and pepper to taste
Directions
Heat oil in a large skillet, add garam masala and stir until fragrant...add onion, celery and carrots and saute until onions are translucent about 5 minutes.
Add lentils and potatoes and stir to coat with seasoning mixtue. Stir in tomaotes and broth and salt and pepper to taste.
Bring to a simmer and reduce heat to medium-low and cover and simmer for 20 minutes stirring occasionally until potaotes and lentils are tender.

Makes 6- 1 cup servings
