L.R. roasted butternut squash cubes

Ingredients
2362g (4 quarts) cubed butternut squash1 T. oil1-1/2 tsp. seasoned salt1-1/2 tsp. chili powder
Directions
Preheat oven to 400 degrees. Toss squash cubes with oil and seasonings. Place in one or two large sheet pans. In does not have to be in one layer but you don't want it more than two deep. Roast in oven for about 1 hour or maybe a little more. Stir occasionally toward the end of cooking. Roast until all liquid is evaporated and squash has carmelized a little, about 1 hour. Makes about 6 cups.

    it was delicious i liked the fact that it was easy to make and it taste great cold i will be making it again the only thing is that about a cup was burnt but my son liked that part he said it was like crunchy fries (lol) thats a teenager for you - 9/30/09

    Very good and easy. Didn't use chili powder as I'm not a fan of it. These were good cold or hot; some mashed with a teaspoon of butter and cinnamon. Thanks for posting! - 7/2/12
