Easy Slow Cooker Shredded Pork for Tacos

Ingredients
2 pork tenderloins (about 2 1/2 lbs.)1 1/2 packets taco seasoning1 medium yellow onion, chopped1 cup salsa (8 oz.)1 sm can (4 oz.) diced green chillies2 jalapenos, sliced1 14 oz. can black beans, rinsed and drainedMakes 16 servings.
Directions
Lay 2 trimmed pork tenderloins (approx. 2 1/2 lbs.) in the bottom of the slow cooker. Pour the taco seasoning over it. Then add the onion, chillies, jalapenos, and salsa. Cover and cook on low for 4 hours. Using 2 forks, shred pork and add the black beans. Stir everything to combine and switch to "warm" for 1 more hour.

    Extremely good! Easy, relatively cheap an LOTS of leftovers. Husband was worried the meat would be dry because of how lean, but no problem. Will be keeping this one. - 10/24/09
