5 Minute Eggplant Parmesian

Ingredients
1 Eggplant, Sliced.5 Cup Fat Free Cottage Cheese.25 Cup Tomato Sauce
Directions
Makes approximately 2 servings.

Eggplant:
Slice the eggplant so that the slices are approx 1/2 inch thick. Grill them on a skillet for 2.5 minutes on each side on medium heat.

Sauce:
Mix the cottage cheese with tomato sauce of your choice. Microwave for 1-2 minutes.
