Ingredients
Stracciatella Soup - Italian Egg soup (Rag soup) 8 cups chicken broth 2 cups noodles (crush spaghetti nooodles, or use any small noodle) 4 eggs 1 lemon 4 Tblsp grated romano
Directions
Bring chicken broth to a boil, add noodles. Cook until al dente. In a bowl, beat eggs and lemon juice until frothy. Add grated cheese to eggs and lemon juice. Turn the heat off under the broth and add eggs to broth while stirring constantly. Put lid on for two minutes and then serve in shallow soup bowls.
Enjoy the "Rag" soup. This is the first soup I ever made as a child and then the first my son made when he was eight. Great for sick days!
